EXER 106 - Nutrition for Health & Human Performance


PREREQUISITES: Demonstrated competency through appropriate assessment or earning a grade of “C” or better in ENGL 093 - Introduction to College Writing  and ENGL 083 - Reading Strategies for College  or ENGL 095 - Integrated Reading and Writing , or ENGL 075 - Co-Requisite Integrated Reading .

The course will describe basic nutritional principles involved in nutrition for optimal health and human performance. Topics to be addressed include macro and micro nutrients, hydration, energy systems and nutrients to fuel physical activity, body composition, contemporary issues in nutrition and fitness, behavior change and nutrition coaching scope of practice for the fitness professional.

MAJOR COURSE LEARNING OBJECTIVES: Upon successful completion of this course the student will be expected to:

  1. Learning Objective 1: Explain the scope of practice and licensure differences between a fitness trainer, nutritionist, and registered dietician.
  2. Describe fundamental principles of client coaching sessions, documentation and the protection and use of health information and records.
  3. Identify macro & micronutrients essential for health (Proteins, Fats, Carbohydrates, Vitamins, Minerals and Fluids)
  4. Discuss the physiology behind nutrient needs and functions in the human body
  5. Examine the relationship between nutrition, disease prevention, and weight management.
  6. Analyze nutrition fads and marketing quackery
  7. Describe nutrition education strategies for a general audience
  8. Examine nutritional behavior modification techniques
  9. Discuss healthy diet plans within scope of practice.
  10. Appraise nutritional supplements and scope of practice for the fitness professional.
  11. Identify nutrient effects on energy metabolism/athletic performance and the effects of exercise on nutrient needs.
  12. Examine the manipulation of macronutrient distribution range for physical activities.
  13. Identify and understand cultural variation in food and nutritional choices

Major Lab Course Learning Objectives:

  1. Utilize the U.S. Dietary Guidelines and Food Guide Pyramid to evaluate the nutrient adequacy in your diet
  2. Utilize computer nutrient analysis software to evaluate the nutrient adequacy in your diet
  3. Explain the benefits of small incremental nutrition changes over time for sustainable change
  4. Measure and calculate BMI, DRI, RMR, and EE
  5. Conduct standard field assessment techniques to measure and calculate waist circumference, BMI, and BIA to determine body mass and body composition
  6. Recognize and compare required nutrition components of food labels
  7. Appraise food selections to determine most nutrient dense option
  8. Conduct an educational food demonstration
