HOSP 127 - Hotel and Restaurant Accounting


PREREQUISITES: Demonstrated competency through appropriate assessment or earning a grade of “C” or better in or ENGL 093 - Introduction to College Writing  and ENGL 083 - Reading Strategies for College  or ENGL 095 - Integrated Reading and Writing , or ENGL 075 - Co-Requisite Integrated Reading , and MATH 023 - Essentials of Algebra  or MATH 080 - Mathematical Principles .

This course provides a basis of understanding hospitality accounting concepts and procedures, the processing of hospitality financial data, and the flow of financial information in the accounting cycle that results in the production of financial statements.

MAJOR COURSE LEARNING OBJECTIVES: Upon successful completion of this course the student will be expected to:

  1. Recognize the meaning and function of hospitality accounting, its importance, and basic US accounting rules and how they are used in hospitality by using the accounting cycle, to analyze and record transactions and prepare basic financial statements in accordance with accrual accounting principles; and in accordance with double-entry accounting.
  2. Prepare basic financial statements, to include the income statement, balance sheet and statement of cash flows and how financial data is processed; including how to use common analytical methods to analyze performance.
  3. Recognize the purpose, advantages, disadvantages, and limitations of internal controls.
  4. Describe the basic elements for food and beverage sales accounting including identifying point-of-sale systems and their features, recognizing the differences between a manual accounting system and a computerized accounting system.
  5. Explain the importance of budgeting and forecasting and describe how managers forecast sales and expenses using variable, fixed and mixed expenses, and breakeven point and target profit formulas.
