Introduces the principles of nutrition and diet therapy for various age groups. Considers socioeconomic, ethnic, and religious factors related to diet. Also focuses on nutritional issues often presented in a healthcare setting, such as weight management, diabetes education, nutritional deficiencies and recommended treatments, nutritional assessment techniques, and the special nutritional needs of individuals with specific health disorders.

MAJOR COURSE LEARNING OBJECTIVES: Upon successful completion of this course the student will be expected to:

  1. List the basic elements of a healthy, balanced diet.
  2. Identify the nutrients necessary for good nutrition and state the functions, requirements, and food sources for these macronutrients and micronutrients.
  3. Demonstrate how nutritional needs change throughout the life cycle.
  4. Explain how culture, ethnic, religious, and economic factors can alter food choices and consumption.
  5. State how digestion and metabolism function effectively.
  6. List the benefits and nutritional components of regular physical activity.
  7. State the basic ways in which to assess nutritional status and intervene effectively.
  8. Discuss disease states and treatments related to nutritional health.
  9. Apply the basic principles of nutrition to create a diet plan.
  10. Define a healthy body weight and explain methods used to assess body composition.
  11. Explain the principles of weight management.
  12. Demonstrate how to read a food label.
  13. Recognize the importance of nutritional knowledge in all health care professions.

  • Nutritional overview
  • Planning a healthy diet
  • Digestion, absorption, and transport
  • Review of the various nutrients, including vitamins and minerals
  • Metabolism and energy balance
  • Weight management
  • Physical activity and fitness
  • Life cycle nutrition (pregnancy through late adulthood)
  • Effects of alcohol on health
  • Characteristics and treatment of anorexia nervosa and bulimia nervosa
  • Impact of nutrition on a variety of disease conditions, including gastrointestinal disorders, diabetes mellitus, heart/lung/blood vessel disorders, renal disease, liver disorders, cancer, and HIV infection.
